Chicken Rotel
1 box Rotini noodles
1 - can mexican rotel
1 - can drained sweet peas (english peas)
1 - can mushroom soup
1/2 stick - velvetta cheese
chopped jalapenos for spice
chicken breasts - however much you want in it
Either bake chicken breasts (350 degrees for 40 minutes) or cook with olive oil on the stove. Boil the noodles until soft.
While that is cooking, Mix your cheese and rotel together and melt in the microwave. Once this has melted, add the peas, mushroom soup, and jalapenos. Mix well.
Preheat oven 350 degrees -
When the chicken is finshed cute in cubes (bitesized), add the chicken and noodles (drained), and the cheese mixture into a casserole dish. Cover with aluminum foil and bake in the oven for about 15 minutes.

Update
Well here lately thing have been bleh. We have been sick with the flu the past two weeks and are just now getting better. Leslie has started back to school at Dyersburg and Jackson State, she did not like the teach that taught chemistry at Dyersburg so she is taking one class in Jackson.
Saturday we went over to Mom and Dads house and I worked on Spencers Jeep and got some cool shots of his Jeep. After we got done with that Caitlin, her kids, Leslie, Daisy, Cookie and I went to the park for a walk and Caitlin took pictures which I hope she posts up...hint hint.
Sunday we went to Meeman -Shelby park for a bike ride. We took the camera with us but left it in the Jeep for some reason, who knows. The park was wonderful! It was a paved trail and it started great and then it the trail started going down the bluff and the bugs started to get BAD, we were riding as fast as we could and then the trail starting to go up.......yea we are out of shape. Overall the whole bike ride was 5miles and it was up and down hills we about died. Leslie would not let me take any pics when we got back to the Jeep since her hair was frizzy and her face was red so sorry. We love everyone!!
